These tostadas are tasty and quick to put together; I love them for dinner o for snack. There's not so much to say except that they are flavor bombs.
Yields: 2 portions
- 1 can Chickpeas
- 1 link Chorizo
- ¼ Cilantro bunch
- ¼ cup Natural yogurt
- 1 Lime
- 1 Avocado
- Salt and Pepper
- Hot sauce (optional)
1. Measure out ½ cup of chickpeas and reserve them for another use.
2. In a bowl, finely grate the lime zest and squeeze the juice. Chop the cilantro finely and add it, incorporate the yogurt and salt, and incorporate everything.
3. Heat a medium skillet over medium-low. Cook chorizo for around 4 min and incorporate the chickpeas. Let them cook for another 6 to 8 min until de chorizo is fully cooked. Remove it from the heat.
4. Prepare the tostadas, spread the yogurt mixture, and add the chickpea-chorizo mixture. You can add them on top with more cilantro and lime. Add the chickpeas that you reserved at the beginning.
